Roasted Vegetables

Raw vegetables....nasty crap. Roasted vegetables with a little bit of olive oil and seasonings in your pantry....Yes please.
I love these! I just cut up a random assortment of vegetable (yellow squash, green squash, brocolli, potatoes, carrots, red onion, any kind of pepper) And then I do a dab of olive oil with whatever spices (thyme, basil, oregano, etc) And put them in the broiler for maybe 5 minutes. I like them a tab crispy and I use them for 2 meals. (I leave a bag of unbroiled vegetable in the fridge, and then cook the second half). I love these in the summer.
